Ingredients
Scale
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
- Food coloring (pastel colors)
- Rainbow sprinkles
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
- 1 teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven: Set the oven to 350°F (175°C) and grease your 9×5 inch loaf pan with butter or non-stick spray.
- Mix the base batter: In a mixing bowl, combine the mashed bananas and melted butter until smooth. Stir in the sugar, then add the beaten egg and vanilla extract, mixing thoroughly.
- Add dry ingredients: Incorporate the baking soda and salt into your mixture. Gradually fold in the flour until just combined.
- Color your batter: Divide the mixture evenly into several bowls. Add a few drops of different pastel food colorings to each bowl, stirring until vibrant.
- Layer the batter: Spoon the colored batters into your prepared loaf pan in layers, alternating colors and swirling gently.
- Bake: Place the loaf pan in the oven and bake for about 60 minutes. Check for doneness with a toothpick.
- Cool and glaze: Let the bread cool for 10 minutes, then transfer to a wire rack. For the glaze, whisk together powdered sugar, milk, and vanilla extract. Once cool, drizzle the glaze and sprinkle with rainbow sprinkles.
Notes
Ensure bananas are overripe for sweetness. For a vegan option, substitute egg with a flax egg. Can be made a day in advance; store wrapped tightly to maintain freshness.
