- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Sauté the diced onion and garlic until golden and translucent.
- Cook the cubed sweet potatoes with smoked paprika, salt, and pepper for 15-20 minutes until tender.
- Add the shredded BBQ chicken, mixing until heated through.
- Melt the cheese over the top, cover until gooey.
- Garnish with fresh parsley and serve hot from the skillet.
