Description

A hearty sweet potato skillet filled with BBQ chicken and melted cheese, perfect for cozy dinners and family gatherings.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 pound BBQ chicken, cooked and shredded
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the diced onion and garlic until golden and translucent.
  3. Cook the cubed sweet potatoes with smoked paprika, salt, and pepper for 15-20 minutes until tender.
  4. Add the shredded BBQ chicken, mixing until heated through.
  5. Melt the cheese over the top, cover until gooey.
  6. Garnish with fresh parsley and serve hot from the skillet.

Notes

Feel free to substitute BBQ chicken with pork or tofu for a vegetarian option. This dish can also be baked in the oven.
