Description
Deliciously creamy peanut butter filling sandwiched between low-carb crackers and coated in white chocolate, perfect for guilt-free snacking.
Ingredients

- 1/4 cup natural creamy peanut butter
- 1/4 cup peanut butter powder
- 3 tbsp powdered allulose
- 1/2 tsp pure vanilla powder
- 1 pinch fine sea salt
- 1/2–2 tsp unsweetened almond milk
- 24 low-carb round crackers
- 3/4 cup ChocZero white chocolate chips
- 1 tsp coconut oil
Instructions
- Line a small tray with parchment paper.
- Combine the peanut butter, peanut butter powder, powdered allulose, vanilla powder, and salt in a mixing bowl.
- Mix until thick and smooth.
- Add almond milk gradually to achieve desired consistency.
- Spread about two teaspoons of the mixture on 12 crackers.
- Top each with another cracker, pressing gently.
- Freeze for 10–12 minutes.
- Meanwhile, melt the white chocolate chips with coconut oil until smooth.
- Dip each sandwich into the chocolate coating.
- Chill in the refrigerator for 20–30 minutes.
- Allow to rest at room temperature for 5 minutes before serving.
Notes
Store treats in an airtight container in the fridge for up to 5 days or freeze for up to a month. You can also experiment with different nut butters or chocolate types.
