Description

Deliciously creamy peanut butter filling sandwiched between low-carb crackers and coated in white chocolate, perfect for guilt-free snacking.


Ingredients

  • 1/4 cup natural creamy peanut butter
  • 1/4 cup peanut butter powder
  • 3 tbsp powdered allulose
  • 1/2 tsp pure vanilla powder
  • 1 pinch fine sea salt
  • 1/22 tsp unsweetened almond milk
  • 24 low-carb round crackers
  • 3/4 cup ChocZero white chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Line a small tray with parchment paper.
  2. Combine the peanut butter, peanut butter powder, powdered allulose, vanilla powder, and salt in a mixing bowl.
  3. Mix until thick and smooth.
  4. Add almond milk gradually to achieve desired consistency.
  5. Spread about two teaspoons of the mixture on 12 crackers.
  6. Top each with another cracker, pressing gently.
  7. Freeze for 10–12 minutes.
  8. Meanwhile, melt the white chocolate chips with coconut oil until smooth.
  9. Dip each sandwich into the chocolate coating.
  10. Chill in the refrigerator for 20–30 minutes.
  11. Allow to rest at room temperature for 5 minutes before serving.

Notes

Store treats in an airtight container in the fridge for up to 5 days or freeze for up to a month. You can also experiment with different nut butters or chocolate types.
