Description

Indulge in these guilt-free Strawberry Chocolate Magnum Bars that combine fresh strawberries and rich dark chocolate for a delightful treat.


Ingredients

  • 3/4 cup smooth strawberry puree (from about 1 cup fresh strawberries)
  • 4 oz Philadelphia light cream cheese, softened
  • 3/4 cup Fage 0% Greek yogurt
  • 3 tbsp Wholesome allulose
  • 1 tbsp ground flaxseed
  • 1/2 tsp pure vanilla powder
  • 1 tsp Knox gelatin, bloomed in 1 tbsp cold water
  • 1/3 cup ChocZero dark chocolate chips
  • 1 1/2 tsp refined coconut oil

Instructions

  1. Prepare the strawberries: Hull the strawberries and blend them until smooth, then press the puree through a fine sieve to ensure a silky texture.
  2. Cream the cheese: In a mixing bowl, beat the softened cream cheese until it’s impeccably smooth and lump-free.
  3. Combine ingredients: Add the Greek yogurt, allulose, ground flaxseed, and vanilla to the cream cheese, and beat until creamy.
  4. Incorporate the strawberry: Gently fold the prepared strawberry puree into the creamy mixture.
  5. Bloom the gelatin: Sprinkle the Knox gelatin over 1 tablespoon of cold water, allowing it to bloom for about 2 minutes.
  6. Melt the gelatin: Using a double boiler, gently warm the bloomed gelatin until fully dissolved.
  7. Temper the gelatin: Whisk 2 tablespoons of the strawberry-cream mixture into the melted gelatin.
  8. Combine: Quickly pour the tempered gelatin back into the main bowl, folding until everything combines.
  9. Fill the molds: Divide the strawberry mixture into your silicone molds, inserting sticks into each.
  10. Freeze: Place the molds in the freezer for at least 6 hours or overnight until solid.
  11. Unmold: Carefully remove the bars from the molds and return them to the freezer for an additional 15 minutes.
  12. Chocolate coating: Melt the chocolate chips with coconut oil, stirring until smooth, then cool slightly before spooning over each bar.
  13. Set and serve: Let the chocolate set for about 2 minutes before serving.
