Description

Delicious and guilt-free fat bombs bursting with strawberry essence and creamy cheesecake flavor, perfect for low-carb and ketogenic diets.


Ingredients

  • 6 oz reduced-fat cream cheese, softened
  • 4 tbsp unsalted butter, softened
  • 1/2 cup fresh strawberries, finely diced and patted dry
  • 1/4 cup powdered monk fruit sweetener
  • 1/2 tsp alcohol-free vanilla
  • 1/2 tsp unflavored gelatin, bloomed in 1 tbsp cold water
  • Pinch of fine sea salt
  • Fresh strawberry halves, for serving

Instructions

  1. Bloom gelatin: In a small bowl, bloom the gelatin in 1 tablespoon of cold water for 5 minutes.
  2. Cream together: In a mixing bowl, beat the softened cream cheese and butter together on medium speed until completely smooth.
  3. Incorporate sweetness: Add the powdered monk fruit sweetener, vanilla, and pinch of salt. Mix on low until all ingredients are fully combined.
  4. Melt the gelatin: Warm the bloomed gelatin in the microwave for approximately 8 seconds until just melted.
  5. Temper gelatin: Whisk in 1 tablespoon of the cream cheese mixture into the melted gelatin. Beat it back into the remaining cream cheese mixture until fully integrated.
  6. Fold in strawberries: Gently fold in the finely diced strawberries until they are evenly distributed throughout the mixture.
  7. Mold the mixture: Spoon the mixture into your silicone mini muffin molds.
  8. Smooth tops: With a small spatula, smooth the tops of the fat bombs.
  9. Tap to release bubbles: Gently tap the mold on the counter to remove any air bubbles.
  10. Freeze: Place the mold in the freezer for a minimum of 180 minutes or until completely firm.
  11. Unmold: Carefully un-mold the fat bombs and let them stand at room temperature for 3–5 minutes before serving.

Notes

Store these fat bombs in an airtight container in the freezer for optimal freshness. They maintain their flavor best when kept frozen.
