Description

A quick and delicious egg bake made with fresh spinach and creamy cheese, perfect for busy mornings.


Ingredients

Scale
  • 1 large egg
  • 2 large egg whites
  • 2 tbsp plain nonfat Greek yogurt
  • 1/2 cup fresh baby spinach, finely chopped
  • 3 tbsp shredded part-skim mozzarella cheese, divided
  • 1/4 tsp garlic powder
  • Small pinch of fine sea salt
  • Small pinch of black pepper

Instructions

  1. Preheat your oven to 375°F. Place a 12 oz oven-safe ceramic mug on a small baking sheet.
  2. Whisk together the egg, egg whites, Greek yogurt, garlic powder, salt, and pepper until smooth.
  3. Gently stir in the chopped spinach and 1 tablespoon of mozzarella.
  4. Fill the mug below two-thirds full, adding more to a larger mug if necessary.
  5. Sprinkle the remaining 2 tablespoons of mozzarella over the top.
  6. Place the mug on the upper-middle rack of the oven and bake for 18–20 minutes.
  7. Let the egg bake rest for 2 minutes before serving.

Notes

You can prepare ingredients the night before for a quicker morning routine. This dish can also be made in an air fryer at 300°F for about 13–15 minutes.
