Description

This vibrant Sugar-Free Pepper Jam combines the perfect balance of peppers, tangy vinegar, and a sugar substitute for a delicious and guilt-free spread.


Ingredients

  • 4 cups chopped peppers (red, green, or a mix)
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1 cup erythritol or another sugar substitute
  • 1 tablespoon pectin
  • 1 teaspoon salt

Instructions

  1. Begin by combining the chopped peppers, apple cider vinegar, water, and erythritol in a large pot. Stir the ingredients gently, ensuring everything blends well.
  2. Over medium heat, bring this vibrant mixture to a simmer. Stay near, stirring frequently to prevent sticking.
  3. As the mixture begins to bubble delightfully, add the pectin and salt. Mix thoroughly, ensuring the pectin dissolves entirely.
  4. Reduce the heat and allow the jam to simmer for about 10-15 minutes, stirring occasionally.
  5. Carefully pour the hot jam into sterilized jars, filling them to within half an inch from the top. Seal with lids while still warm.
  6. Let the jars cool completely at room temperature before storing them in the refrigerator.
