A delightful and guilt-free twist on a classic treat, this Sugar-Free Peanut Brittle combines crunchy peanuts with a sweet, buttery flavor, perfect for snacking or gifting.
Ingredients

- 1/2 cup granular isomalt
- 1/2 cup granulated allulose
- 1/4 cup water
- 1 cup dry-roasted lightly salted peanuts
- 1 tbsp unsalted butter, room temperature
- 1/2 tsp pure vanilla powder
- 1/8 tsp baking soda
Instructions
- Line a large baking sheet with parchment paper or a silicone baking mat.
- Combine the isomalt, allulose, and water in a heavy 3-quart saucepan over medium heat.
- Stir gently until the sweeteners dissolve and the mixture begins to boil.
- Attach a candy thermometer to the pan and cook until it reaches 250°F.
- Add the peanuts and butter, stirring gently to coat the peanuts.
- Continue cooking until the mixture reaches 275°F and turns golden amber.
- Remove from heat and stir in the vanilla powder.
- Add the baking soda, stirring briefly to foam lightly.
- Pour the hot mixture onto the prepared baking sheet and spread into an even layer.
- Cool completely for about 30 minutes before breaking into pieces.
Notes
Store in an airtight container at room temperature for up to one week. Can also be frozen for up to three months.
