Description

Delightful sugar-free cookie cups with a minty flavor and a chocolate ganache center.


Ingredients

  • 1 1/2 cups almond flour
  • 1 tbsp oat fiber
  • 1 tbsp unflavored whey protein isolate
  • 1/3 cup granulated allulose
  • 3/4 tsp baking powder
  • 1/4 tsp fine sea salt
  • 1 tbsp dark chocolate chips (finely chopped)
  • 1 large egg
  • 1 large egg white
  • 2 tbsp Greek yogurt
  • 1 tbsp unsalted butter (melted)
  • 1/2 tsp alcohol-free peppermint flavor
  • 1/2 tsp pure vanilla powder
  • 2 drops natural green food coloring
  • 3/4 cup dark chocolate chips
  • 3 tbsp heavy whipping cream
  • 3 tbsp unsweetened almond milk

Instructions

  1. Lightly grease a 12-cavity standard muffin pan.
  2. Whisk together almond flour, oat fiber, whey protein, finely ground allulose, baking powder, sea salt, and chopped chocolate chips in a bowl.
  3. In a separate bowl, whisk together egg, egg white, Greek yogurt, melted butter, peppermint flavor, vanilla, and green food coloring.
  4. Fold the dry mix into the wet mix until a soft dough forms.
  5. Chill the dough for 15 minutes.
  6. Preheat the oven to 325°F (163°C).
  7. Divide dough into 12 portions and press into muffin cavities.
  8. Chill the shaped pan for 10 minutes.
  9. Bake for 14-16 minutes until lightly golden-brown.
  10. Press the center of each cookie cup to deepen the well.
  11. Cool for 20 minutes in the pan, then remove and cool completely.
  12. Warm heavy cream and almond milk until steaming.
  13. Pour over chocolate chips, wait 1 minute, then stir until smooth.
  14. Let the ganache cool until thick but pipeable.
  15. Pipe about 1 tablespoon of chocolate into each cookie cup.
  16. Chill for 30 minutes until the chocolate is set.
  17. Let stand for 15-20 minutes before serving.

Notes

These cookie cups are perfect for special occasions or a guilt-free treat. Consider adding crushed nuts or a sprinkle of sea salt on top of the ganache for added crunch.
