Description

A decadent, guilt-free Texas Sheet Cake that satisfies your sweet cravings while being keto-friendly and sugar-free.


Ingredients

  • 1 1/4 cups almond flour
  • 1/2 cup cocoa powder
  • 2 tbsp unflavored whey protein isolate
  • 1 tbsp oat fiber
  • 2/3 cup allulose
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp fine sea salt
  • 3 large eggs
  • 3 large egg whites
  • 3/4 cup Greek yogurt
  • 3 tbsp unsalted butter, melted and cooled
  • 1/2 cup hot strong brewed coffee
  • 1 tsp pure vanilla powder
  • 2 oz dark chocolate chips
  • For the frosting: 3 tbsp unsalted butter
  • 3 tbsp cocoa powder
  • 1/4 cup powdered allulose
  • 3 tbsp almond milk (warmed)
  • 1/2 tsp pure vanilla powder

Instructions

  1. Preheat your oven to 350°F and lightly grease your 9×13-inch baking dish.
  2. Whisk together almond flour, cocoa powder, whey protein isolate, oat fiber, allulose, baking powder, baking soda, and sea salt in a large bowl.
  3. In another bowl, whisk eggs, Greek yogurt, melted butter, and vanilla until smooth.
  4. Fold the dry mixture into the wet mixture until just combined.
  5. Gradually stir in the hot coffee until smooth.
  6. Beat the egg whites in a clean bowl to medium-stiff peaks.
  7. Fold the whipped egg whites into the chocolate batter in three additions.
  8. Pour the batter into the prepared dish and spread evenly.
  9. Bake for 24-29 minutes, checking for doneness at 24 minutes.
  10. Allow the cake to rest for 5 minutes while preparing the frosting.
  11. Melt butter and almond milk in a saucepan, whisk in cocoa powder and powdered allulose until smooth.
  12. Add dark chocolate chips and vanilla, stirring until glossy.
  13. Pour the warm frosting over the warm cake.
  14. Cool completely for at least 1 hour before cutting.

Notes

Baking can be done a day in advance; frost just before serving. Customize further by adding nuts or different chocolate chips.
