Description

Delightful cookies that mimic the rich flavors of a classic Kentucky butter cake, but without the sugar.


Ingredients

  • 1 1/3 cups Bob’s Red Mill almond flour
  • 1/4 cup Anthony’s lupin flour
  • 1 tbsp Anthony’s oat fiber
  • 1 tbsp Isopure unflavored whey protein isolate
  • 1/3 cup Wholesome allulose
  • 1/4 cup Lakanto powdered monk fruit
  • 1 tsp Rumford baking powder
  • 1/4 tsp fine sea salt
  • 1/3 cup Kerrygold unsalted butter, softened
  • 1 large egg
  • 1 large egg white, room temperature
  • 1/4 cup Fage 0% Greek yogurt
  • 1/2 tsp pure vanilla powder
  • 1/2 tsp alcohol-free butter extract

For glaze:

  • 2 tbsp Kerrygold unsalted butter
  • 2 tbsp Wholesome allulose
  • 2 tbsp Lakanto powdered monk fruit
  • 1 1/2 tbsp Silk unsweetened almond milk
  • 1/4 tsp pure vanilla powder

Instructions

  1. Creaming the butter and sweeteners: In a mixing bowl, beat softened Kerrygold butter, Wholesome allulose, and Lakanto powdered monk fruit on high for about two minutes.
  2. Incorporating the wet ingredients: Add the egg, egg white, Greek yogurt, pure vanilla powder, and alcohol-free butter extract. Beat on low until fully combined.
  3. Mixing the dry ingredients: In another bowl, whisk together almond flour, lupin flour, oat fiber, whey protein isolate, baking powder, and sea salt.
  4. Combining wet and dry: Gently fold the dry ingredients into the wet mixture until a soft dough forms.
  5. Chilling the dough: Cover and refrigerate for 30 minutes.
  6. Preheating the oven: Preheat to 325°F and prepare baking sheets with parchment paper.
  7. Shaping the cookies: Roll chilled dough into 24 balls, flattening each to about 1/2-inch thickness.
  8. Baking: Bake for 13–16 minutes until edges are set and golden.
  9. Cooling: Cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
  10. Glazing: Melt butter, allulose, and almond milk. Whisk in powdered monk fruit and vanilla until smooth and glaze cookies while warm.
  11. Finishing touches: Allow cookies to cool completely until the glaze sets.

Notes

Chill dough to avoid spreading. Can customize with add-ins like sugar-free chocolate chips or spices.
