  • 2 large eggs, separated + 1 large egg white
  • 3/4 cup Greek yogurt (0%)
  • 1/4 cup unsweetened almond milk
  • 1 tsp unsalted butter, melted
  • 1 tsp alcohol-free banana extract
  • 1/2 tsp pure vanilla powder
  • 1/4 tsp cinnamon
  • 2 oz 1/3 less fat cream cheese, softened
  • 1 cup Greek yogurt (0%), strained overnight
  • 2 tbsp powdered allulose
  • 1/2 tsp pure vanilla powder
  • 1/4 tsp alcohol-free banana extract
  • 1 pinch fine sea salt

Instructions

  1. Preheat your oven to 325°F (163°C) and line an 8×8 metal pan with parchment paper for easy removal.
  2. Mix the dry ingredients: In a mixing bowl, whisk together the almond flour, coconut flour, oat fiber, whey protein, allulose, baking powder, and a pinch of salt until totally uniform.
  3. Prepare the wet mixture: In another bowl, whisk together the egg yolks, Greek yogurt, almond milk, melted butter, banana extract, vanilla powder, and cinnamon.
  4. Combine: Gently fold the dry ingredients into the wet mixture until smooth and thick.
  5. Whip the egg whites: In a separate bowl, whip the egg whites until soft peaks form.
  6. Incorporate: Carefully fold the whipped egg whites into the batter in two additions.
  7. Bake: Spread the batter evenly into the prepared pan and bake for 26–30 minutes.
  8. Cool: Allow the cake to cool completely in the pan before frosting.
  9. Prepare the frosting: Beat the softened cream cheese until smooth and gradually fold in the strained Greek yogurt, allulose, vanilla powder, banana extract, and a pinch of salt.
  10. Frost the cake: Once the cake is cool, spread the frosting evenly over the top and chill for about an hour.
  11. Slice and serve: Cut into 12 generous squares.

Notes

Ensure to whip the egg whites until soft peaks form for the best texture. Letting the cake cool completely before frosting is crucial.
