Description

Indulge in these vibrant and guilt-free Sugar-Free Cotton Candy Mousse Cups, a delightful treat that captures the essence of summer fairs.


Ingredients

  • 4 oz Philadelphia 1/3 Less Fat cream cheese, softened
  • 1 cup Fage 0% Greek yogurt, strained overnight
  • 1/3 cup Wholesome powdered allulose
  • 1 tbsp Lakanto powdered monk fruit
  • 1/4 tsp LorAnn Super-Strength Cotton Candy Flavor
  • 1/2 tsp pure vanilla powder
  • 3/4 tsp Knox gelatin, bloomed in 1 tbsp cold water for 5 minutes
  • 1/2 cup Organic Valley heavy whipping cream, very cold
  • Toothpick-tip verified sugar-free blue and pink gel color
  • 12 tiny verified sugar-free cotton candy wisps, for garnish

Instructions

  1. Bloom the gelatin by soaking in 1 tablespoon of cold water for 5 minutes.
  2. Melt the bloomed gelatin gently over a double boiler until just liquid.
  3. Beat the softened cream cheese until silky smooth, then add yogurt, powdered allulose, monk fruit, cotton candy flavor, and vanilla; beat until creamy.
  4. Whisk 2 tablespoons of your mousse base into the dissolved gelatin to temper it, then fold back into the bowl.
  5. Whip the heavy cream in a chilled bowl to medium-stiff peaks.
  6. Fold the whipped cream into the mousse base in two additions.
  7. Divide the mousse into three bowls; tint with blue, pink, and a mix of both for lavender.
  8. Spoon alternating strips of color into a piping bag with a star tip.
  9. Pipe into twelve 2-ounce ramekins.
  10. Chill in the fridge for 2 hours until set.
  11. Garnish each cup with a sugar-free cotton candy wisp before serving.

Notes

Make ahead for convenience and garnish just before serving to keep the cotton candy fresh.
