- 1/3 cup Wholesome powdered allulose
- 1 tbsp Lakanto powdered monk fruit
- 1/4 tsp LorAnn Super-Strength Cotton Candy Flavor
- 1/2 tsp pure vanilla powder
- 3/4 tsp Knox gelatin, bloomed in 1 tbsp cold water for 5 minutes
- 1/2 cup Organic Valley heavy whipping cream, very cold
- Toothpick-tip verified sugar-free blue and pink gel color
- 12 tiny verified sugar-free cotton candy wisps, for garnish
Instructions
- Bloom the gelatin by soaking in 1 tablespoon of cold water for 5 minutes.
- Melt the bloomed gelatin gently over a double boiler until just liquid.
- Beat the softened cream cheese until silky smooth, then add yogurt, powdered allulose, monk fruit, cotton candy flavor, and vanilla; beat until creamy.
- Whisk 2 tablespoons of your mousse base into the dissolved gelatin to temper it, then fold back into the bowl.
- Whip the heavy cream in a chilled bowl to medium-stiff peaks.
- Fold the whipped cream into the mousse base in two additions.
- Divide the mousse into three bowls; tint with blue, pink, and a mix of both for lavender.
- Spoon alternating strips of color into a piping bag with a star tip.
- Pipe into twelve 2-ounce ramekins.
- Chill in the fridge for 2 hours until set.
- Garnish each cup with a sugar-free cotton candy wisp before serving.
