Description
A healthy alternative to traditional fruit cake, this sugar-free version combines dried fruits and nuts with warm spices for a festive treat.

- 1/2 cup unsweetened dried cranberries, roughly chopped
- 1/4 cup unsweetened dried cherries, roughly chopped
- 1/4 cup fresh orange juice, warmed
- 1 tsp McCormick alcohol-free vanilla
- 1 1/2 cups Bob’s Red Mill almond flour
- 1 tbsp Anthony’s oat fiber
- 1 1/2 tsp Rumford baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1 pinch fine sea salt
- 1/2 cup Wholesome allulose
- 2 large eggs, room temperature
- 2 large egg whites, room temperature
- 1/3 cup Fage 0% Greek yogurt
- 1 tbsp Kerrygold unsalted butter, melted and cooled
- 1/4 cup raw walnuts, roughly chopped
- 1/4 cup raw pecans, roughly chopped
Instructions
- Combine the dried cranberries, dried cherries, warm orange juice, and vanilla extract in a bowl. Cover and let the mixture soak for 1-2 hours.
- Preheat the oven to 300°F (150°C). Line an 8×4-inch loaf pan with parchment paper.
- Whisk together the almond flour, oat fiber, baking powder, spices, and salt in a separate bowl.
- Drain the fruit mixture well and pat lightly with paper towels.
- Toss the drained fruit with 1 tablespoon of the dry mixture.
- Beat the eggs, egg whites, and allulose on HIGH for 3 minutes.
- Add the Greek yogurt and melted butter, mixing on low.
- Fold in the remaining dry mixture until almost combined.
- Gently fold in the coated fruit and nuts.
- Transfer the batter to the prepared pan and smooth the top.
- Bake for 55-65 minutes or until the center is set.
- Cool in the pan for 20 minutes, then transfer to a wire rack to cool completely.
- Wrap tightly in plastic wrap and refrigerate overnight.
Notes
This cake is perfect for make-ahead enjoyment, and different dried fruits can be used based on your preferences.
