- 1/2 tsp unflavored gelatin, bloomed in 1 tbsp cold water
- 5 oz sugar-free dark chocolate chips
- 1 tsp coconut oil

- Prepare your silicone muffin cups: Set ten standard 2.5-inch fluted silicone muffin cups on a tray to ensure stability while filling.
- Melt the chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat gently, stirring until completely smooth.
- Coat the cups: Brush two-thirds of the melted chocolate over the bottoms and sides of the cups. Chill for about 10 minutes in the refrigerator.
- Blend the cream cheese and sweetener: Beat the softened cream cheese with powdered allulose until smooth and fluffy.
- Incorporate yogurt and flavor: Add the strained yogurt, peppermint flavoring, and food coloring. Beat the mixture for 1–2 minutes until light and airy.
- Work with the gelatin: Warm the bloomed gelatin just until it fully dissolves, then mix it with one tablespoon of the filling. Blend this back into the remaining filling.
- Fill the chocolate shells: Divide the filling among the cooled chocolate shells, leaving about 1/8 inch at the top. Smooth the tops gently.
- Firm up the centers: Chill the filled cups for approximately 45 minutes, or until the centers feel firm to the touch.
- Seal with chocolate: Rewarm the remaining melted chocolate and spread a thin layer over each filled center, sealing them.
- Final chill: Chill the cups for another 60 minutes until fully set.
- Unmold and serve: Carefully remove the cups from their molds. Keep refrigerated and serve cold for the best experience.
