Description

Ingredients

  • 3 tbsp Organic Valley heavy whipping cream
  • 1 tbsp Kerrygold unsalted butter
  • 1/2 tsp pure vanilla powder
  • 1/4 tsp fine sea salt
  • 2/3 cup dry roasted peanuts, unsalted—coarsely chopped
  • 3/4 cup ChocZero milk chocolate chips
  • 1/2 tsp coconut oil (optional)

Instructions

  1. Prepare your loaf pan: Line a 6×4-inch small loaf container with parchment.
  2. Combine the ingredients: Add allulose, heavy cream, unsalted butter, and sea salt to your heavy-bottomed saucepan.
  3. Cook the caramel: Place the saucepan over medium-low heat, stirring frequently until it reaches 238–240°F.
  4. Add the finishing touches: Once removed from heat, stir in the pure vanilla powder and fold in the coarsely chopped peanuts.
  5. Spread and set: Pour the mixture into the lined loaf container and spread it out evenly.
  6. Freeze: Chill in the freezer for 45–60 minutes until firm enough to cut.
  7. Melt the chocolate: In a bowl, melt your chocolate chips until smooth, adding coconut oil if needed.
  8. Dip the bars: Dip each frozen bar in chocolate, allowing excess to drip off.
  9. Garnish: Drizzle any remaining chocolate over the tops.
  10. Final chill: Allow to chill for an additional 20–30 minutes.
  11. Serve: Enjoy cold from the refrigerator.
