Description

A guilt-free and indulgent ice cream that combines rich chocolate, buttery caramel, and creamy cottage cheese for a delightful treat.


Ingredients

Scale
  • 1 1/2 cups Good Culture 4% cottage cheese
  • 1/2 cup Fage 0% Greek yogurt
  • 1/4 cup Hershey’s Natural unsweetened cocoa powder
  • 1/2 cup Wholesome allulose
  • 1 tsp McCormick alcohol-free vanilla
  • 1/4 tsp xanthan gum
  • 2 tbsp Wholesome allulose (for caramel)
  • 1 tbsp Kerrygold unsalted butter
  • 2 tbsp Organic Valley heavy cream
  • Tiny pinch of salt

Instructions

  1. Start by pre-mixing the xanthan gum with the allulose in a bowl until fully combined.
  2. Blend together the cottage cheese, Greek yogurt, cocoa powder, the pre-mixed allulose, and vanilla extract for 60–90 seconds until completely smooth.
  3. Pour the blended mixture into a 9×5 shallow metal loaf pan and cover the surface directly with plastic wrap.
  4. Place the pan in the freezer for 45 minutes and stir vigorously with a fork to break up any emerging ice crystals.
  5. Return it to the freezer for another 45 minutes, then stir again.
  6. Let it freeze for an additional 2–3 hours until fully set and scoopable.
  7. Melt the butter over medium-low heat in a small saucepan for the caramel.
  8. Add 2 tbsp of allulose and cook for 5–7 minutes, stirring until golden brown.
  9. Whisk in the heavy cream and a pinch of salt, cooking for one more minute.
  10. Before serving, let the ice cream soften at room temperature for 10–15 minutes.
  11. Scoop into bowls and drizzle caramel over each serving.

Notes

Customize with your favorite nuts or sugar-free chocolate chips. Use lactose-free ingredients if needed.
