Description

Indulge in these delicious sugar-free caramel pecan cheesecake bars that combine creamy cheesecake goodness with a crunchy pecan topping, all on a buttery almond crust.


Ingredients

  • 1 tbsp oat fiber
  • 2 tbsp powdered allulose
  • 2 tsp unsalted butter, melted
  • 1 large egg white
  • 1 tbsp Greek yogurt 0%
  • 1 pinch fine sea salt
  • 6 oz 1/3 less fat cream cheese, softened
  • 1 cup Greek yogurt 0%, measured after straining overnight
  • 1/3 cup powdered allulose
  • 1 large egg
  • 1 large egg white, room temperature
  • 1/2 tsp pure vanilla powder
  • 1 tsp fresh lemon juice
  • 1 pinch fine sea salt
  • 1/3 cup raw pecan halves
  • 3 tbsp brown allulose
  • 1 tbsp heavy whipping cream
  • 1 tsp unsalted butter
  • 1/4 tsp pure vanilla powder
  • 1 pinch fine sea salt

Instructions

  1. Preheat your oven to 325°F (163°C) and line a 6×6-inch square metal pan with parchment paper.
  2. Prepare the crust by mixing almond flour, oat fiber, powdered allulose, and salt in a bowl. Add melted butter, egg white, and Greek yogurt; stir until crumbly.
  3. Press the crust mixture firmly into the bottom of the prepared pan.
  4. Par-bake the crust for 9–11 minutes until lightly golden. Cool for 10 minutes.
  5. Make the filling by beating cream cheese until smooth, then mix in strained Greek yogurt, powdered allulose, vanilla powder, lemon juice, and salt. Add egg and egg white; mix gently.
  6. Assemble by pouring the filling over the cooled crust, smoothing the surface, and placing pecan halves on top.
  7. Bake for 32–36 minutes, until edges are set and center jiggles. Cool completely and refrigerate for at least 4 hours.
  8. Lift the cheesecake out of the pan and cut into 9 squares using a warm knife.
  9. Prepare the caramel by combining brown allulose, heavy whipping cream, butter, and salt in a saucepan; cook until glossy.
  10. Finish by drizzling caramel over each square and refrigerate for an additional 30 minutes before serving.

Notes

For a thicker consistency, strain your Greek yogurt overnight. These bars can be made in advance for better flavor.
