- 4 large eggs, room temperature
- 1/2 cup Wholesome allulose
- 1 cup Silk unsweetened almond milk
- 3/4 cup Fage 0% Greek yogurt
- 1 tsp apple cider vinegar
- 1 tbsp arrowroot powder
- 1 tsp Kerrygold unsalted butter, melted and cooled
- 1 tsp pure vanilla powder
- 1/2 tsp fresh lemon zest
- 1/4 tsp ground nutmeg
- 1/4 tsp fine sea salt
- Light dusting of ground nutmeg — immediately before serving
Instructions
- Preheat your oven to 325°F. Lightly grease a deep 8-inch ceramic pie dish.
- Whisk together almond flour, coconut flour, powdered allulose, and a pinch of salt in a mixing bowl until uniform.
- Add melted butter and egg white. Mix until evenly moistened; add almond milk if too crumbly.
- Press the crust evenly in the dish, aiming for a thin layer.
- Par-bake the crust for 9–11 minutes until set and lightly golden. Cool for 10 minutes.
- Whisk almond milk, Greek yogurt, and apple cider vinegar until smooth. Let rest for 5 minutes.
- In another bowl, whisk together allulose, arrowroot powder, nutmeg, and salt.
- Add the eggs to the dry mixture and whisk gently until combined.
- Incorporate the yogurt mixture into the egg mixture, followed by melted butter, vanilla, and lemon zest.
- Strain the filling through a fine-mesh sieve for a smooth texture.
- Pour the filling into the par-baked crust.
- Bake for 40–46 minutes until edges are set and the center has a gentle wobble.
- Cool the pie completely at room temperature for at least an hour.
- Chill in the refrigerator for at least 4 hours, then dust with nutmeg before serving.
Notes
This pie can be made ahead and keeps well in the refrigerator. Consider baking a day in advance for enhanced flavors.
