- 4 small boneless, skinless chicken breasts (5 oz each)
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp fine sea salt
- 1/4 tsp black pepper
- 2 tsp olive oil
- 3 tbsp balsamic vinegar (no added sugar)
- 1/4 cup low-sodium chicken broth
- 1 tbsp Dijon mustard (no added sugar)
- 1 tsp arrowroot powder
- 1 cup cherry tomatoes, halved
- 1/2 cup reduced-fat shredded mozzarella
- 1 tbsp chopped fresh basil
Instructions
- Begin by preheating your oven to 400°F. Lightly coat your ceramic baking dish with olive oil.
- Pat your chicken dry with paper towels and pound to an even thickness of about 3/4 inch.
- In a small mixing bowl, combine the Italian seasoning, garlic powder, paprika, sea salt, and pepper.
- Arrange the chicken in your prepared dish and generously season both sides with the herb mixture.
- Whisk together the balsamic vinegar, chicken broth, Dijon mustard, and arrowroot powder until smooth.
- Pour the balsamic concoction around the chicken and scatter the halved cherry tomatoes.
- Bake for 15 minutes, then baste the chicken with pan juices.
- Sprinkle with shredded mozzarella and return to the oven for another 5–7 minutes until the chicken reaches an internal temperature of 165°F.
- Allow to rest for five minutes before serving with a sprinkle of fresh basil.
Notes
Prepare the chicken and marinade the night before for quicker cooking. Can be made in an air fryer at 375°F for about 10 to 12 minutes.
