- 1 cup strawberries, pureed
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 1/2 cups heavy cream
- 1/2 teaspoon vanilla extract
- 1 package gelatin
- 3 eggs
- 1/2 cup flour
- 1/4 cup butter, melted
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the eggs and sugar until fluffy.
- Fold in the flour and melted butter until smooth.
- Pour the batter into the prepared cake pan and bake for 20-25 minutes.
- Whip the heavy cream until soft peaks form.
- Fold in the vanilla extract and sugar to create mousse.
- Dissolve the gelatin in warm strawberry puree and mix it into the whipped cream.
- Slice the cooled sponge cake in half horizontally.
- Layer the mousse between the sponge layers and chill for at least 4 hours.
- Serve with fresh strawberry puree on top.
Notes
This mousse cake can be made a day in advance for deeper flavors. Use a premade sponge cake to save time if desired.
