Description

Delicious strawberry oatmeal bars combining the sweetness of strawberries with hearty oats, perfect as a snack or dessert.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries, chopped
  • 1/4 cup strawberry jam
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease your 9×9 inch baking dish thoroughly.
  2. In a large bowl, combine rolled oats, all-purpose flour, both sugars, and salt. Stir well to mix.
  3. Add the melted butter and vanilla extract. Mix until the mixture resembles coarse sand.
  4. Press half of this mixture into the bottom of the greased baking dish to form a crust.
  5. In another bowl, toss chopped strawberries with strawberry jam and lemon juice until coated.
  6. Pour the strawberry mixture over the crust and spread it evenly.
  7. Sprinkle the remaining oat mixture on top of the strawberries.
  8. Bake for 25-30 minutes until golden brown on top.
  9. Allow to cool in the pan before cutting into squares.
