Delicious strawberry oatmeal bars combining the sweetness of strawberries with hearty oats, perfect as a snack or dessert.

- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups fresh strawberries, chopped
- 1/4 cup strawberry jam
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C). Grease your 9×9 inch baking dish thoroughly.
- In a large bowl, combine rolled oats, all-purpose flour, both sugars, and salt. Stir well to mix.
- Add the melted butter and vanilla extract. Mix until the mixture resembles coarse sand.
- Press half of this mixture into the bottom of the greased baking dish to form a crust.
- In another bowl, toss chopped strawberries with strawberry jam and lemon juice until coated.
- Pour the strawberry mixture over the crust and spread it evenly.
- Sprinkle the remaining oat mixture on top of the strawberries.
- Bake for 25-30 minutes until golden brown on top.
- Allow to cool in the pan before cutting into squares.
Notes
