Description

A heartwarming meatloaf stuffed with creamy mac and cheese and wrapped in crispy bacon, drizzled with sticky maple BBQ sauce.


Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 1 egg
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup macaroni
  • 1 cup shredded cheese (cheddar or similar)
  • 1/2 cup cream
  • 8 slices of bacon
  • 1/2 cup maple BBQ sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the ground beef, ground pork, breadcrumbs, egg, diced onion, minced garlic, salt, and pepper until well combined.
  3. Cook the macaroni according to package directions until al dente. Drain and stir in the shredded cheese and cream.
  4. Take half of the meat mixture and press it into a loaf shape in a greased baking dish.
  5. Fill the well with the creamy mac and cheese mixture.
  6. Use the remaining meat mixture to encase the mac and cheese.
  7. Wrap the loaf with bacon slices.
  8. Brush the top with maple BBQ sauce.
  9. Bake for about 1 hour or until the bacon crisps up and the meat is cooked through.
  10. Allow the loaf to rest for a few minutes before slicing.

Notes

For a lighter option, you can substitute turkey for ground beef and pork. Refrigerate leftovers in an airtight container for up to 3 days.
