Description
A heartwarming meatloaf stuffed with creamy mac and cheese and wrapped in crispy bacon, drizzled with sticky maple BBQ sauce.

- 1 lb ground beef
- 1 lb ground pork
- 1 cup breadcrumbs
- 1 egg
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tsp pepper
- 1 cup macaroni
- 1 cup shredded cheese (cheddar or similar)
- 1/2 cup cream
- 8 slices of bacon
- 1/2 cup maple BBQ sauce
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the ground beef, ground pork, breadcrumbs, egg, diced onion, minced garlic, salt, and pepper until well combined.
- Cook the macaroni according to package directions until al dente. Drain and stir in the shredded cheese and cream.
- Take half of the meat mixture and press it into a loaf shape in a greased baking dish.
- Fill the well with the creamy mac and cheese mixture.
- Use the remaining meat mixture to encase the mac and cheese.
- Wrap the loaf with bacon slices.
- Brush the top with maple BBQ sauce.
- Bake for about 1 hour or until the bacon crisps up and the meat is cooked through.
- Allow the loaf to rest for a few minutes before slicing.
Notes
For a lighter option, you can substitute turkey for ground beef and pork. Refrigerate leftovers in an airtight container for up to 3 days.
