- 2 lbs chicken thighs or breast
- 1 cup orange juice
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon cornstarch
- 2 tablespoons water
- Salt and pepper to taste
- Cooked rice for serving
- Green onions and sesame seeds for garnish
Instructions
- Whisk together the orange juice, soy sauce, honey, minced garlic, and grated ginger in a medium mixing bowl until completely blended.
- Place the chicken into the slow cooker and pour the sauce over it, ensuring each piece is coated generously.
- Cover and set the slow cooker to cook on low for 360 minutes (6 hours) or on high for 240 minutes (4 hours).
- Mix the cornstarch with the water in a small bowl until smooth about 30 minutes before the cooking time is complete. Stir this into the slow cooker to thicken the sauce.
- Shred the chicken with two forks back into the sauce once the cooking time is done, blending it well.
- Serve over fluffy cooked rice, garnishing with green onions and sesame seeds.
Notes
You can swap honey for maple syrup or agave for a different taste. For a vegetarian twist, substitute chicken with tofu.
