Delightful rings of pineapple soaked in rum and coated in coconut, fried to a crispy perfection.

- 8 Pineapple Rings (fresh or canned)
- 1 Cup Dark Rum
- 1 Cup Coconut Rum
- 1 ½ Cups All-Purpose Flour
- 10 oz Sweetened Coconut Flakes
- 2 Large Eggs
- ½ Cup Coconut Milk
- Vegetable Oil for Frying
- 4 oz Cream Cheese, Softened
- ½ Cup Powdered Sugar
Instructions
- Soak the pineapple rings in dark rum and coconut rum for at least one hour, then drain and pat dry.
- Prepare three shallow bowls for the breading station: one with flour, one with eggs and coconut milk, and one with coconut flakes.
- Coat each pineapple ring by dredging it in flour, dipping it in the egg mixture, and pressing it into coconut flakes.
- Fry in hot vegetable oil at 350°F (175°C) for about one minute per side until golden brown, then drain on paper towels.
- Create the dipping sauce by mixing softened cream cheese with powdered sugar and a splash of the reserved rum until smooth.
Notes
For a healthier option, try air frying or baking the pineapple rings instead. Consider soaking the pineapple overnight for deeper flavor.
