Description

Juicy pulled pork tacos with a refreshing crunch of cabbage and vibrant flavors enhanced by lime.


Ingredients

  • 2 pounds pork shoulder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • Salt and pepper, to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. Prepare the pork: In your slow cooker, layer the pork shoulder, chopped onion, and minced garlic. Sprinkle the chili powder, cumin, salt, and pepper over the top, giving everything a gentle mix.
  2. Slow cook: Set your slow cooker to low and allow to cook for about 480 minutes, or until the pork becomes tender.
  3. Shred the pork: Once done, use two forks to shred the pork in the slow cooker, mixing it with the juices.
  4. Warm the tortillas: Heat your tortillas in a skillet or microwave until soft and pliable.
  5. Assemble the tacos: Begin by placing shredded pork onto each tortilla and topping with cabbage, tomatoes, cilantro, and a squeeze of lime juice.
  6. Serve & enjoy: Serve the tacos with extra lime wedges on the side.
