- 2 pounds pork shoulder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 tablespoon cumin
- Salt and pepper, to taste
- 8 small corn or flour tortillas
- 1 cup shredded cabbage
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions
- Prepare the pork: In your slow cooker, layer the pork shoulder, chopped onion, and minced garlic. Sprinkle the chili powder, cumin, salt, and pepper over the top, giving everything a gentle mix.
- Slow cook: Set your slow cooker to low and allow to cook for about 480 minutes, or until the pork becomes tender.
- Shred the pork: Once done, use two forks to shred the pork in the slow cooker, mixing it with the juices.
- Warm the tortillas: Heat your tortillas in a skillet or microwave until soft and pliable.
- Assemble the tacos: Begin by placing shredded pork onto each tortilla and topping with cabbage, tomatoes, cilantro, and a squeeze of lime juice.
- Serve & enjoy: Serve the tacos with extra lime wedges on the side.
