- 4 boneless, skinless chicken breasts
- 1 pound baby potatoes, halved
- 1 pound green beans, trimmed
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the halved baby potatoes with olive oil, garlic powder, salt, and pepper.
- Spread the potatoes out in a single layer on a baking sheet.
- Season the chicken breasts with salt and pepper and place on the baking sheet with the potatoes.
- Drizzle balsamic vinegar over the chicken and potatoes.
- Bake for 20 minutes.
- Add the green beans to the pan, toss gently, and return to the oven for another 15-20 minutes.
- Serve warm, garnished with fresh parsley if desired.
Notes
For added flavor, substitute chicken breasts with thighs or use red wine vinegar instead of balsamic.
