Description

A comforting cherry pie with a buttery, flaky crust and a luscious cherry filling, perfect for any gathering.


Ingredients

  • 1 pie crust (store-bought or homemade)
  • 2 cups cherry filling (fresh or canned)
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter (optional, for topping)
  • Egg wash (1 egg beaten with 1 tablespoon water, optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Roll out the pie crust onto a lightly floured surface and fit it into your pie dish.
  3. Combine the cherry filling, sugar, cornstarch, lemon juice, and vanilla extract in a mixing bowl and stir gently.
  4. Pour the cherry mixture into the pie crust, spreading it out evenly.
  5. Dot with butter if desired, and cover with a second crust, crimping the edges to seal.
  6. Cut slits in the top crust to allow steam to escape.
  7. Brush with egg wash for a golden finish if using.
  8. Bake for 30-35 minutes or until the crust is golden brown and the filling is bubbly.
  9. Allow to cool before serving to let the filling set.

Notes

Make-ahead tips: Prepare the pie crust and filling in advance, and store in the refrigerator. Use frozen cherries as a great alternative.
