Description

A hearty, comforting casserole layered with seasoned ground beef and topped with a creamy, cheesy cauliflower mixture, perfect for cozy gatherings or satisfying weeknight dinners.


Ingredients

  • 1 lb 96% lean ground beef
  • 1/2 cup onion, finely diced
  • 2 tbsp no-sugar-added tomato paste
  • 1 tbsp taco seasoning — no added sugar
  • 1/4 tsp black pepper
  • 1 1/2 cups cauliflower rice
  • 1/2 cup no-added-sugar diced tomatoes, well drained
  • 1/2 cup Fage 0% Greek yogurt
  • 2 oz Philadelphia 1/3 Less Fat cream cheese, softened
  • 1 large egg
  • 1/4 cup reduced-fat cheddar, shredded
  • 1/4 cup part-skim mozzarella, shredded
  • 1 pinch fine sea salt
  • 1/2 cup reduced-fat cheddar, shredded
  • 2 tbsp green onion, sliced (optional)
  • 1 tbsp cilantro, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease your deep 8×8-inch baking dish with cooking spray.
  2. Cook the ground beef with the finely diced onion in a large skillet over medium-high heat until the beef is browned and the onion is tender.
  3. Stir in the tomato paste, taco seasoning, and black pepper. Cook for an additional 2-3 minutes until the mixture thickens.
  4. Press the beef mixture evenly into the bottom of your prepared baking dish.
  5. Sauté the cauliflower rice in a separate skillet over medium heat for 4-5 minutes, allowing excess moisture to cook off.
  6. Stir in the well-drained diced tomatoes and cook for one more minute. Remove from heat.
  7. Beat together the softened cream cheese, Greek yogurt, and egg in a mixing bowl until smooth.
  8. Fold in the cooled cauliflower mixture, adding 1/4 cup of cheddar cheese, 1/4 cup of mozzarella, and the pinch of salt.
  9. Spread this creamy cauliflower mixture evenly over the beef layer.
  10. Sprinkle the remaining 1/2 cup of shredded cheddar over the top.
  11. Bake for 25-30 minutes until the middle is set and the cheese melts.
  12. Allow to rest for 15 minutes before slicing. Garnish with sliced green onion and chopped cilantro if desired.
