Description

A guilt-free twist on traditional pizza, this casserole melds layers of lean beef, cauliflower rice, and rich cheeses for a nostalgic and wholesome meal.


Ingredients

  • 1 lb 96% lean ground beef
  • 2 cups thawed cauliflower rice, squeezed very dry
  • 1/2 cup no-added-sugar marinara sauce
  • 1 tbsp tomato paste – no added sugar
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 1/2 cups part-skim mozzarella, shredded – divided
  • 1/2 cup reduced-fat cheddar, shredded – divided
  • 1/2 cup Fage 0% Greek yogurt
  • 2 large eggs
  • 2 tbsp grated Parmesan
  • 1/4 tsp fine sea salt
  • 20 turkey pepperoni slices – pork-free, 0g added sugars
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a deep 9-inch round baking dish.
  2. Cook the ground beef in a skillet over medium-high heat until browned, breaking it apart for about 5–7 minutes.
  3. Drain any extra liquid to avoid greasiness.
  4. Stir in marinara sauce, tomato paste, Italian seasoning, garlic powder, and black pepper; cook for 2–3 minutes until the sauce thickens.
  5. Cook the squeezed cauliflower rice in another skillet for 4–5 minutes to remove moisture.
  6. Let the beef and cauliflower cool for 5 minutes before combining.
  7. Whisk Greek yogurt, eggs, Parmesan cheese, and salt until smooth in a large bowl.
  8. Fold in the beef mixture, cauliflower rice, and 1/4 cup of mozzarella.
  9. Spread half of the mixture into the baking dish.
  10. Sprinkle 1/2 cup of mozzarella and 1/4 cup of cheddar cheese evenly over the top.
  11. Cover with the remaining casserole mixture, smoothing it down.
  12. Top with remaining mozzarella and cheddar.
  13. Arrange turkey pepperoni slices on top.
  14. Bake for 28–32 minutes until golden and set; broil for 1–2 minutes if needed.
  15. Rest for 15 minutes, then slice into wedges and sprinkle with parsley before serving.

Notes

Make ahead by prepping beef and cauliflower a day in advance. Store leftovers in an airtight container.
