A guilt-free twist on traditional pizza, this casserole melds layers of lean beef, cauliflower rice, and rich cheeses for a nostalgic and wholesome meal.

- 1 lb 96% lean ground beef
- 2 cups thawed cauliflower rice, squeezed very dry
- 1/2 cup no-added-sugar marinara sauce
- 1 tbsp tomato paste – no added sugar
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1 1/2 cups part-skim mozzarella, shredded – divided
- 1/2 cup reduced-fat cheddar, shredded – divided
- 1/2 cup Fage 0% Greek yogurt
- 2 large eggs
- 2 tbsp grated Parmesan
- 1/4 tsp fine sea salt
- 20 turkey pepperoni slices – pork-free, 0g added sugars
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a deep 9-inch round baking dish.
- Cook the ground beef in a skillet over medium-high heat until browned, breaking it apart for about 5–7 minutes.
- Drain any extra liquid to avoid greasiness.
- Stir in marinara sauce, tomato paste, Italian seasoning, garlic powder, and black pepper; cook for 2–3 minutes until the sauce thickens.
- Cook the squeezed cauliflower rice in another skillet for 4–5 minutes to remove moisture.
- Let the beef and cauliflower cool for 5 minutes before combining.
- Whisk Greek yogurt, eggs, Parmesan cheese, and salt until smooth in a large bowl.
- Fold in the beef mixture, cauliflower rice, and 1/4 cup of mozzarella.
- Spread half of the mixture into the baking dish.
- Sprinkle 1/2 cup of mozzarella and 1/4 cup of cheddar cheese evenly over the top.
- Cover with the remaining casserole mixture, smoothing it down.
- Top with remaining mozzarella and cheddar.
- Arrange turkey pepperoni slices on top.
- Bake for 28–32 minutes until golden and set; broil for 1–2 minutes if needed.
- Rest for 15 minutes, then slice into wedges and sprinkle with parsley before serving.
Notes
Make ahead by prepping beef and cauliflower a day in advance. Store leftovers in an airtight container.
