Description

A vibrant Mediterranean steak bowl featuring seared sirloin steak, fluffy cauliflower rice, fresh vegetables, and creamy tzatziki without added sugars.


Ingredients

  • 1 lb 96% lean sirloin steak
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper
  • Nonstick cooking spray
  • 3 cups cauliflower rice
  • 1/2 cup cherry tomatoes, halved
  • 3/4 cup cucumber, sliced
  • 2 tbsp red onion, thinly sliced
  • 2 tbsp reduced-fat feta, crumbled
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup 0% Greek yogurt
  • 1/4 cup cucumber, finely grated and squeezed dry
  • 1 tsp fresh lemon juice
  • 1/4 tsp garlic powder
  • 1 tbsp fresh dill or parsley
  • Pinch of fine sea salt

Instructions

  1. Prepare the tzatziki: In a mixing bowl, combine Greek yogurt, finely grated cucumber, lemon juice, garlic powder, and fresh dill or parsley. Mix until smooth and refrigerate.
  2. Season the sirloin steak on both sides with garlic powder, oregano, smoked paprika, salt, and black pepper.
  3. Heat a nonstick skillet over high heat and lightly coat with nonstick cooking spray.
  4. Cook the seasoned steak for 3-4 minutes on one side, then flip and cook for another 3-4 minutes.
  5. Rest the steak for 5 minutes before slicing against the grain.
  6. Sauté cauliflower rice in the skillet for 5-6 minutes until dry and fluffy.
  7. Assemble bowls with cauliflower rice, sliced steak, cherry tomatoes, cucumber, and red onion.
  8. Add 2 tablespoons of tzatziki to each bowl, topped with feta and parsley.
  9. Serve immediately and enjoy!

Notes

Make tzatziki and cauliflower rice ahead of time to save on preparation. Customize toppings to taste.
