Description

A delicious and hearty No-Added-Sugar Keto Meatball Parmesan Casserole, perfect for satisfying cravings while honoring health goals.


Ingredients

  • 1 lb 96% lean ground beef
  • 1 large egg
  • 2 tbsp Bob’s Red Mill almond flour
  • 1/4 cup grated Parmesan
  • 2 tbsp Fage 0% Greek yogurt
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1 1/4 cups no-added-sugar marinara sauce
  • 1 cup Sargento reduced-fat mozzarella, shredded
  • 2 tbsp grated Parmesan
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Grease a deep 8×8-inch ceramic baking dish lightly.
  2. Combine ground beef, egg, almond flour, grated Parmesan, Greek yogurt, garlic powder, Italian seasoning, onion powder, and black pepper in a large bowl.
  3. Shape the mixture into 12 even meatballs. Arrange them in the baking dish, leaving space between each meatball.
  4. Bake uncovered for 12 minutes until meatballs begin to brown.
  5. Remove any liquid that may have released from the dish.
  6. Spoon marinara sauce around the meatballs, keeping some surfaces browned for visual appeal.
  7. Sprinkle mozzarella predominantly between the meatballs and add an extra 2 tbsp of grated Parmesan.
  8. Return the dish to the oven and bake for 12-15 minutes until sauce bubbles and cheese melts.
  9. Rest for 8-10 minutes before serving. Finish with chopped parsley.

Notes

Make the meatballs a few hours in advance and store in the fridge until ready to bake. For an alternative cooking method, try air frying the meatballs.
