Description

A wholesome and savory casserole featuring lean ground beef, vibrant bell peppers, and creamy cheese, all without added sugar.


Ingredients

  • 20 oz lean ground beef, 96% lean
  • 1 green bell pepper, sliced into 1/4-inch strips
  • 1 yellow bell pepper, sliced into 1/4-inch strips
  • 1 red bell pepper, sliced into 1/4-inch strips
  • 1 small yellow onion, thinly sliced into half-moons
  • 2 tsp olive oil
  • 1/2 tsp fine sea salt
  • 1/2 tsp black pepper
  • 6 oz Philadelphia light cream cheese, softened and cubed
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup Fage 0% Greek yogurt, room temperature
  • 2 1/2 tsp fresh garlic, minced
  • 2 tsp dried oregano
  • 2 tsp ground cumin
  • 3/4 tsp chili powder
  • 3/4 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 3/4 tsp black pepper
  • 1 tbsp fresh lime juice
  • 1 1/2 cups Sargento reduced-fat Mexican four-cheese blend, shredded

Instructions

  1. Preheat your oven to 350°F. Lightly grease a 9×13 ceramic baking dish.
  2. Brown the ground beef in a large skillet over medium-high heat with salt and pepper.
  3. Cook the beef uninterrupted for 30 seconds between stirs, then drain excess fat.
  4. Heat the olive oil in a separate skillet, then toss in the bell peppers and onion. Cook for 5-6 minutes.
  5. Return to the beef skillet, add cream cheese and chicken broth, stirring constantly until smooth.
  6. Fold in the Fage yogurt, garlic, oregano, cumin, chili powder, smoked paprika, garlic powder, additional black pepper, and lime juice.
  7. Mix in the sautéed peppers and onions along with the drained beef.
  8. Transfer the mixture to the baking dish and spread evenly.
  9. Sprinkle the shredded Mexican cheese over the top.
  10. Bake uncovered for 20-25 minutes until cheese is melted and golden.
  11. Let the casserole rest for 10 minutes before serving.
