Description

Deliciously creamy and rich cauliflower mashed potatoes made without added sugar, providing a healthy alternative to traditional recipes.


Ingredients

  • 24 oz fresh cauliflower florets (about 1 large head)
  • 2 oz Philadelphia light cream cheese, softened
  • 1/4 cup Fage 0% Greek yogurt
  • 2 tbsp Kerrygold unsalted butter
  • 1/4 cup Silk unsweetened almond milk, warmed
  • 1/2 tsp garlic powder
  • 1/4 tsp white pepper
  • 1/2 tsp fine sea salt
  • 2 tbsp fresh chives, finely chopped
  • Optional: A pat of Kerrygold butter for topping

Instructions

  1. Rice the cauliflower florets in your food processor until they resemble small rice grains.
  2. Steam the riced cauliflower in a large covered saucepan with 2 tablespoons of water for 10-12 minutes, or until tender.
  3. Transfer the steamed cauliflower to a clean kitchen towel, wrap tightly, and squeeze to eliminate excess moisture.
  4. Return the dried cauliflower to the saucepan over low heat for 2-3 minutes to evaporate any residual steam.
  5. Process the cauliflower in a food processor with the cream cheese, butter, garlic powder, white pepper, and sea salt until smooth.
  6. Fold in the Greek yogurt and gradually mix in the warm almond milk until achieving a creamy texture.
  7. Taste and adjust seasoning as needed.
  8. Transfer to a serving bowl, top with fresh chives, and optionally, a pat of butter. Serve immediately.

Notes

Store leftovers in an airtight container for up to 4 days. Reheat gently in the microwave, adding almond milk if necessary.
