Description

A comforting Mexican Tater Tot Casserole that combines crispy tater tots with seasoned ground beef, creamy cheese, and zesty salsa for a hearty meal.


Ingredients

  • 1 bag frozen tater tots
  • 1 pound ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • Chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the meat in a large skillet over medium heat, browning the ground beef or turkey and draining excess fat.
  3. Combine the taco seasoning, black beans, corn, and salsa into the skillet and let it cook for an additional 2-3 minutes.
  4. Assemble the casserole by spreading the meat mixture in a greased casserole dish and placing frozen tater tots on top.
  5. Bake for 25-30 minutes until the tater tots are golden brown.
  6. Add the shredded cheese to the top and return it to the oven for 5-7 minutes until melted.
  7. Serve with a spoonful of sour cream and a sprinkle of green onions.
