- 1 bag frozen tater tots
- 1 pound ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- Chopped green onions (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the meat in a large skillet over medium heat, browning the ground beef or turkey and draining excess fat.
- Combine the taco seasoning, black beans, corn, and salsa into the skillet and let it cook for an additional 2-3 minutes.
- Assemble the casserole by spreading the meat mixture in a greased casserole dish and placing frozen tater tots on top.
- Bake for 25-30 minutes until the tater tots are golden brown.
- Add the shredded cheese to the top and return it to the oven for 5-7 minutes until melted.
- Serve with a spoonful of sour cream and a sprinkle of green onions.
