Description

A vibrant and refreshing slaw combining crunchy cabbage, sweet corn, zesty lime, and creamy dressing, perfect for summer gatherings.

Ingredients

Scale
  • 4 cups shredded cabbage
  • 1 cup corn
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Combine the shredded cabbage, corn, diced red onion, bell peppers, and fresh cilantro in a large mixing bowl. Gently toss to distribute the vegetables uniformly.
  2. Whisk together the mayonnaise, lime juice, chili powder, and a generous pinch of salt and pepper in a smaller bowl until smooth and cohesive.
  3. Pour the creamy dressing over the cabbage mixture. Toss thoroughly until every piece is well coated.
  4. Cover the bowl with plastic wrap or transfer the slaw to an airtight container. Refrigerate for at least 15 minutes to allow the flavors to meld.
  5. Serve your Mexican Corn Slaw as a refreshing side dish at BBQs, picnics, or potlucks.

Notes

Make-ahead tips: Keep the dressing separate until serving to prevent sogginess. Feel free to experiment with textures by adding radishes or avocados.
