- ½ cup unsalted butter, melted
- ⅓ cup granulated sugar
- 2 (14-ounce) cans sweetened condensed milk
- ¾ cup fresh key lime juice
- 4 large egg yolks
- Zest of 2 key limes
- Whipped cream (for serving)
- Lime wedges (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the graham cracker crumbs, melted butter, and sugar in a medium bowl.
- Press the crumb mixture into the bottom of a greased 9×9-inch baking dish.
- Whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth.
- Pour the filling over the crust and spread it evenly.
- Bake for 20-25 minutes, until the filling is set but slightly jiggly.
- Cool at room temperature for 30 minutes, then chill in the fridge for at least 2 hours.
- Cut into squares and serve with whipped cream and lime wedges.
Notes
Using fresh key limes is recommended for the best flavor. You can prepare these bars ahead of time and store in the refrigerator for up to 3 days.
