- 2 cups granulated sugar
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1 tsp vanilla extract
- 1/4 cup corn syrup
- Powdered sugar for dusting
Instructions
- Combine the granulated sugar, heavy cream, unsalted butter, corn syrup, and vanilla extract in a heavy saucepan.
- Set the saucepan over medium heat, stirring continuously until the sugar completely dissolves (about 5 minutes).
- Bring the mixture to a boil, cooking until it reaches the soft ball stage (240°F or 115°C).
- Remove the saucepan from heat and let it cool slightly for safe handling.
- Grease your hands generously with butter, and begin pulling the candy, stretching and folding it for about 7-10 minutes until it lightens in color.
- Shape the pulled candy into logs or bite-sized pieces and dust with powdered sugar.
- Let the candy set at room temperature for a few hours before cutting into pieces.
Notes
Store in an airtight container for up to two weeks in the refrigerator, or freeze for longer preservation.
