Ingredients

Scale
  • 1 pound ground beef or turkey
  • 2 tablespoons jerk seasoning
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • Chopped cilantro for garnish

Instructions

  1. Prepare the mixture: In a mixing bowl, combine the ground meat, jerk seasoning, breadcrumbs, egg, chopped green onions, and a pinch of salt and pepper.
  2. Form the meatballs: Shape the mixture into meatballs about one inch in diameter.
  3. Brown the meatballs: Heat the vegetable oil in a large skillet over medium heat and brown the meatballs on all sides, about 7-10 minutes.
  4. Make the sauce: In a separate pot, combine coconut milk, curry powder, soy sauce, and brown sugar and whisk until smooth.
  5. Cook the meatballs: Add the browned meatballs to the simmering sauce and cook for about 15-20 minutes.
  6. Garnish and serve: Serve warm, garnished with chopped cilantro.

Notes

For a make-ahead option, prepare the meatball mixture in advance and refrigerate. You can also use ground chicken instead of beef or turkey.
