Description

Rich and creamy refried beans made effortlessly in an Instant Pot, perfect as a side dish or main component of your meal.


Ingredients

Scale
  • 1 cup dried pinto beans
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt to taste
  • Optional: Chili powder, lime juice, fresh cilantro

Instructions

  1. Rinse and sort the dried pinto beans in cold water, removing any debris.
  2. Prepare the Instant Pot by adding the rinsed beans, water, chopped onion, minced garlic, and cumin; stir to combine.
  3. Seal the lid of the Instant Pot and set it to high pressure for 35 minutes.
  4. Allow the pressure to release naturally for about 10-15 minutes.
  5. Carefully release the remaining pressure and open the lid.
  6. Mash the beans to your desired consistency using a potato masher or fork.
  7. Add salt to taste, along with optional chili powder and lime juice; stir well.
  8. Serve garnished with freshly chopped cilantro.

Notes

You can store leftovers in an airtight container for up to a week or freeze portions for up to 3 months.
