Ingredients

- 1 cup dried pinto beans
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt to taste
- Optional: Chili powder, lime juice, fresh cilantro
Instructions
- Rinse and sort the dried pinto beans in cold water, removing any debris.
- Prepare the Instant Pot by adding the rinsed beans, water, chopped onion, minced garlic, and cumin; stir to combine.
- Seal the lid of the Instant Pot and set it to high pressure for 35 minutes.
- Allow the pressure to release naturally for about 10-15 minutes.
- Carefully release the remaining pressure and open the lid.
- Mash the beans to your desired consistency using a potato masher or fork.
- Add salt to taste, along with optional chili powder and lime juice; stir well.
- Serve garnished with freshly chopped cilantro.
Notes
You can store leftovers in an airtight container for up to a week or freeze portions for up to 3 months.
