Description

A delightful dish featuring tender chicken breasts roasted with sweet potatoes and crisp green beans, coated in a luscious honey garlic glaze.


Ingredients

  • 4 chicken breasts (boneless, skinless)
  • 2 sweet potatoes (cubed)
  • 1 lb green beans (trimmed)
  • 1/4 cup honey
  • 4 cloves garlic (minced)
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes by peeling and cubing them into about 1-inch pieces.
  3. Trim the green beans by snapping off the ends and setting them aside.
  4. Make the sauce by whisking together honey, minced garlic, soy sauce, olive oil, salt, and pepper in a mixing bowl.
  5. Combine the chicken breasts, sweet potatoes, and green beans in a baking dish, pouring the sauce over them.
  6. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F and sweet potatoes are fork-tender.
  7. Serve warm with an extra drizzle of the remaining sauce over the top.

Notes

Prep and marinate the chicken a day ahead for convenience. Use an air fryer for quicker cooking if desired.
