- 4 chicken breasts (boneless, skinless)
- 2 sweet potatoes (cubed)
- 1 lb green beans (trimmed)
- 1/4 cup honey
- 4 cloves garlic (minced)
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the sweet potatoes by peeling and cubing them into about 1-inch pieces.
- Trim the green beans by snapping off the ends and setting them aside.
- Make the sauce by whisking together honey, minced garlic, soy sauce, olive oil, salt, and pepper in a mixing bowl.
- Combine the chicken breasts, sweet potatoes, and green beans in a baking dish, pouring the sauce over them.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F and sweet potatoes are fork-tender.
- Serve warm with an extra drizzle of the remaining sauce over the top.
Notes
