Description

Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheese (Cheddar or cheese blend)
  • 1 cup cooked rice (white or brown)
  • 1/2 cup black beans (optional)
  • 1/2 cup cooked protein (chicken, beef, or tofu)
  • 1 tablespoon taco seasoning
  • 1/4 cup sour cream (optional)
  • 1/4 cup salsa (optional)
  • Butter for grilling

Instructions

  1. Preheat the skillet: Heat your skillet or griddle over medium heat.
  2. Mix the filling: In a mixing bowl, combine the cooked rice, black beans, protein, taco seasoning, and half of the cheese.
  3. Prepare the tortilla: Lay a tortilla flat and place half of the filling in the center.
  4. Layer with cheese: Sprinkle the remaining cheese over the filling.
  5. Fold and roll: Fold in the sides of the tortilla, then roll tightly from the bottom.
  6. Butter it up: Spread butter on the outside of the burrito.
  7. Grill to perfection: Place the burrito seam-side down in the skillet. Cook for 3-4 minutes on each side.
  8. Serve and enjoy: Remove the burrito, slice if desired, and serve warm with sour cream and salsa.

Notes
