Instructions
- Preheat the oven to 350°F (175°C).
- Cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until combined.
- Combine the flour, baking powder, and a pinch of salt in another bowl.
- Gradually incorporate the dry ingredients into the wet mixture until just combined.
- Scoop tablespoon-sized portions of dough onto lined baking sheets, spacing them two inches apart.
- Bake for 10-12 minutes or until edges are lightly golden.
- Cool the cookies on the baking sheet for a few minutes before transferring them to a cooling rack.
- Prepare the frosting by beating cream cheese, powdered sugar, and vanilla until smooth.
- Spread frosting on cooled cookies and arrange fresh fruit on top.
