Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 can cream of chicken soup
- 1 onion, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup frozen mixed vegetables (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the rice, chicken broth, cream of chicken soup, chopped onion, garlic powder, salt, and pepper in a large baking dish.
- Lay the chicken breasts on top of the rice mixture.
- Cover the baking dish tightly with aluminum foil.
- Bake for 1 hour.
- Remove the foil and bake for an additional 15 minutes.
- If desired, stir in the frozen mixed vegetables during the last 10 minutes of baking.
- Serve hot and enjoy!
Notes
Make ahead by prepping the casserole the night before. Can also use air fryer with adjusted cooking times.
