Description
A one-pot summer dinner featuring tender chicken, earthy black beans, and vibrant corn, all simmered in rich barbecue sauce.
Ingredients

- 2 pounds of chicken breasts
- 1 cup of barbecue sauce
- 1 cup of corn
- 1 cup of black beans
- 1 onion, chopped
- 1 bell pepper, chopped
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Layer the chicken breasts at the bottom of your crockpot.
- Pour the barbecue sauce over the chicken.
- Layer the corn, black beans, onion, and bell pepper atop the chicken.
- Sprinkle with salt and pepper to taste.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Shred the chicken in the pot using two forks after cooking.
- Mix well with the other ingredients.
- Garnish with chopped cilantro before serving.
Notes
Chop vegetables uniformly for even cooking. Prep can be done a night before.
