Description

A one-pot summer dinner featuring tender chicken, earthy black beans, and vibrant corn, all simmered in rich barbecue sauce.


Ingredients

Scale
  • 2 pounds of chicken breasts
  • 1 cup of barbecue sauce
  • 1 cup of corn
  • 1 cup of black beans
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Layer the chicken breasts at the bottom of your crockpot.
  2. Pour the barbecue sauce over the chicken.
  3. Layer the corn, black beans, onion, and bell pepper atop the chicken.
  4. Sprinkle with salt and pepper to taste.
  5. Cover and cook on low for 6-8 hours or high for 4 hours.
  6. Shred the chicken in the pot using two forks after cooking.
  7. Mix well with the other ingredients.
  8. Garnish with chopped cilantro before serving.

Notes

Chop vegetables uniformly for even cooking. Prep can be done a night before.
