- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 large eggs
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 tablespoon chopped parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C). Season the chicken breasts generously with salt and pepper on both sides.
- Create a lightweight assembly line with flour, whisked eggs, and a mixture of Parmesan and breadcrumbs.
- Dredge each chicken breast in the flour, then dip in egg, and roll in the Parmesan-breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and fry the chicken for 3-4 minutes per side until golden brown.
- Transfer the fried chicken to a baking dish and bake for 15-20 minutes until the internal temperature reaches 165°F.
- Sauté minced garlic in the same skillet, then add heavy cream and cook until thickened. Adjust seasoning.
- Serve chicken hot, drizzled with creamy garlic sauce and sprinkle with fresh parsley.
Notes
Can substitute half-and-half for a lighter sauce or use almond flour for gluten-free.
