- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons chipotle honey sauce
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 2 cups potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup smoked gouda cheese, shredded
- Butter, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Mix chipotle honey, smoked paprika, garlic powder, salt, and pepper in a bowl to create a marinade.
- Coat the chicken thighs with the marinade, ensuring they are fully covered.
- Place the chicken in a baking dish and bake for about 25-30 minutes or until they reach an internal temperature of 165°F (75°C).
- Meanwhile, bring a pot of salted water to boil and add the cubed potatoes. Boil until tender, about 15 minutes.
- Drain the potatoes, then return them to the pot to evaporate excess water.
- Mash the potatoes with milk and butter until smooth.
- Stir in the smoked gouda until melted and creamy.
- Serve the chicken thighs alongside the smoked gouda mashed potatoes, drizzled with extra chipotle honey sauce if desired.
Notes
For deeper flavor, marinate chicken thighs the night before. Use an air fryer for a quicker cooking option.
