Description

Ingredients

  • 1 can (15 oz) black beans, rinsed and drained
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • Tortilla strips, for serving

Instructions

  1. Sauté aromatic ingredients: In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, stirring continuously until the onion softens, about 2-3 minutes.
  2. Add vegetables: Introduce the diced tomatoes, corn, and black beans into the pot. Stir to combine.
  3. Incorporate chicken and broth: Pour in the chicken broth along with the shredded chicken. Sprinkle in the chili powder, cumin, salt, and pepper. Mix gently.
  4. Simmer the soup: Bring to a gentle boil, then reduce heat and let simmer for 20 minutes.
  5. Serve hot: Ladle the soup into bowls, topping with crispy tortilla strips.
