Description

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 4 medium Yukon Gold or Russet potatoes, diced
  • 6 slices of bacon, chopped
  • 1 packet ranch seasoning
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup shredded cheddar cheese

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Transfer to a paper towel-lined plate.
  2. Sauté the onion and garlic in the bacon drippings until translucent (3-5 minutes).
  3. Add the diced potatoes and chicken, stirring to coat in the drippings.
  4. Pour in the chicken broth and bring to a gentle simmer. Cover and cook for 15-20 minutes, until potatoes are fork-tender.
  5. Blend with an immersion blender for a smooth texture, leaving some chunks if desired.
  6. Stir in the heavy cream and ranch seasoning, simmering for another 5-10 minutes.
  7. Finish by adding the crispy bacon and cheddar cheese until melted.
  8. Serve topped with extra bacon, cheese, and fresh herbs.
