Instructions
- Brown the ground beef in a large skillet over medium heat, breaking it apart as it cooks. Drain excess fat.
- Add the taco seasoning, stirring well to coat the beef.
- Combine with rice and water or broth, mixing thoroughly.
- Bring to a gentle boil, watching for bubbling action.
- Simmer on low heat for about 20 minutes, until rice is tender and liquid is absorbed.
- Stir in optional diced tomatoes and corn, cooking for a few more minutes.
