Description

Ingredients

  • 1 pound ground beef
  • 1 cup rice
  • 2 cups water or beef broth
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 can diced tomatoes (optional)
  • 1 cup corn (optional)
  • Salt and pepper to taste
  • Toppings: sour cream, avocado, salsa

Instructions

  1. Brown the ground beef in a large skillet over medium heat, breaking it apart as it cooks. Drain excess fat.
  2. Add the taco seasoning, stirring well to coat the beef.
  3. Combine with rice and water or broth, mixing thoroughly.
  4. Bring to a gentle boil, watching for bubbling action.
  5. Simmer on low heat for about 20 minutes, until rice is tender and liquid is absorbed.
  6. Stir in optional diced tomatoes and corn, cooking for a few more minutes.
  7. Melt the cheese on top, covering the skillet to allow it to melt.
